Loaded Chicken and Potato Casserole

Four changes I made:

1. Smoked Paprika instead of plain Paprika

2. Melted Soy free Earth Balance buttery spread instead of olive oil b/c I didn't know that I was out of EVOO until had chopped potatoes & chicken. So if you like the taste of butter better than EVOO, then change it.

3. Addition of 2 tbs. of balsamic vinegar in butter and spices b/c it seemed it was missing some kind of kick.

4. A mix of Goat-Gouda and Sheep-Manchego cheeses

Served with roasted Asparagus

This is one of those man-pleasing recipes. I was asked if I was sure that I had saved the recipe.
