Do you surface bake?

Self-explanatory.  I know some do, and some don't.  Just wondering if there is a general consensus.

Thanks, I was just curious.  I know Dr. Pierson does, and I have tried it both ways, but honestly, the cats seem to like it better when I don't, so I probably won't anymore.  The dogs don't seem to care one way or the other.
