Apple sauce
« on: October 17, 2017, 04:24:31 PM »
A couple weeks ago I made up some apple sauce with some apples too yucky to eat fresh.

Darn! I keep forgetting to get cinnamon!

I'd already started the sauce when I realized.  The only thing I had was allspice, so I tentatively shook some in.  It was...okay..but I didn't love it.  I ate some that night and since then it's been siting in my fridge.  This weekend I finally remembered to get cinnamon.  So last night I had another yucky apple.  I cut it up and added it to the existing sauce with the allspice and added the cinnamon.

It was really good! The two spices blended together gave it a very interesting taste that I actually liked, maybe even better than plain cinnamon and brown sugar.!

I use applesauce a lot as a sweetener in a lot of desserts. It cuts the need for so much oil and sugar. For oil, you can replace it 1-to-1, but as far as the sugar goes, it's a "taste it" kind of thing to figure out how much to cut. But cut the sugar to 1/3 to 1/2 the recipe's amount to start with.

I made apple sauce again.  This time I had the cinnamon for it of course, but I added a tiny shake of the allspice to it too.  I really like it that way.  So glad I discovered it.
