Don't know the carb content.  According to Mo's Carb Chart:

However, they did not want it to be shared with the public.  The companies request that they are
contacted directly, so they may provide the most accurate numbers.

Less than 7% carbs, but I won't say more than that.

The beef food has "meat broth" instead of beef broth, but other than that I like it and Amber never had any issues with it.

Back when Nightmare was on canned, I did try feed this to him.  However, he wouldn't eat it, but I guess with him that doesn't mean much :(

I like it for the lower calories, for my one kitty who has food anxiety, because I can feed her more. Even so she only gets it about once a week, I feed three flavors, the beef&liver, the chicken&liver and the turkey&liver

Little Cat won't eat it except once in a very great while, and struvite kitty eats the By Nature Organic Turkey and Chicken exclusively.  The organic line doesn't have carrageenan which appears to bother her system. It DOES have a menadione bisulfate ingredient, but as it is the last ingredient on the list, I've had to just try to let it go. The organic is slightly higher in calories, 150 cal per 6 ounce can

The 95% is made in Canada, with all USA sourced ingredients.  The organic is made in the USA, with all USA sourced ingredients.

Ah blast it. When did they add the menadione?

It was the Organic that has (or had) menadione.

However, on their website the ingredients list is different now (for the organic) from what is listed on the cans I have, and reads much like the 95%, including carrageenan.  Carrageenan is something I am trying to avoid for one of my cats.

This is why people don't understand when their cats "suddenly get sick" on a food they've been eating all their lives.  People don't realize that companies change formulas, adding or subtracting ingredients whenever they feel like it, without any notification.  It's infuriating.
