Breakfast for Dinner--Witty Cakes
« on: September 19, 2015, 06:41:10 PM »
These things are pretty good. Even hubs liked them. These are one of those gluten-free things that should sit for a bit to thicken though. A lot of recipes don't say that, but it helps.

Link removed per BobsRedMillDOTcom request.

Ingredients

1 cup Brown Rice Flour
1/3 cup Organic Coconut Flour
1 Tbsp Baking Powder
2 tsp Orange's Zest
1-1/2 tsp Poppy Seeds
1/2 tsp Xanthan Gum
1/4 tsp Sea Salt
2  Eggs
1 cup Coconut Milk
1/2 cup Cream Soda
1/4 cup Earth Balance melted

Instructions

In a large bowl, combine dry ingredients and add orange zest and poppy seeds.

In a small bowl, or large measuring cup, break in two eggs and whisk briefly to break the yolks.

Add the coconut milk, cream soda and Earth Balance to the eggs and whisk to combine.

Add the wet mixture to the dry mixture and stir just until combined.

Cook on a skillet over medium high heat. Coat skillet with oil or Earth Balance before spooning batter onto heated surface.

Wittycakes should take just a couple of minutes (at the most) on each side.

Plate up and serve with maple syrup. Then stand back, these go quickly!

Makes about 1 dozen 4-inch pancakes.

Hmmmm interesting.

Take a picture next time you make them... please.  I'd like to see if they look better than they sound.   Silly7

It actually reminded me of orange, poppy-seed muffins--with a different texture. They look just like pancakes with little black dots.

If you remember, don't link to BobsRedMillDotCom.  They think Google is punishing them for links to their website.

Gotcha, but that's a bit crazy. I don't completely understand today's version of SEO though.
